We refuse to believe that there’s a chocolate lover out there who doesn’t love brownies, especially rocky road ones. The combination of the gooey brownie and soft marshmallows is to die for. Today, we’ll share a recipe that will blow your mind. You can make the base ahead of time without adding the marshmallows, and keep the brownies covered in the pan for up to two days. When you’re ready to enjoy them, add all the toppings and slice. Feel free to add smoked almonds on top for that extra crunch!
How to Make Them
Ingredients:
- 1 cup unsalted butter
- 1 cup granulated sugar
- 3/4 cup packed light brown sugar
- 1 1/2 cups bittersweet chocolate chips, divided
- 2/3 cup Dutch-process cocoa powder
- 2 tbsp strong brewed coffee
- 2 tsp vanilla extract
- 1 1/4 tsp kosher salt
- 3 large eggs
- 1 cup all-purpose flour
- 2/3 cup coarsely chopped roasted, salted almonds, divided
- 2 cups miniature marshmallows
Instructions:
- Start by preheating your oven to 350°F. Grease a baking pan with cooking spray and line it with parchment paper, leaving an inch of paper overhanging on the sides. Spray the parchment paper with cooking spray.
- Melt the butter, add granulated and brown sugar, and whisk well. Once you remove the mixture from the heat, add 1 cup of chocolate chips and wish until melted. Add cocoa powder, coffee, vanilla, and salt and mix. Let cool for five minutes.
- Crack one egg into the chocolate mixture and whisk quickly. Do the same with the rest of the eggs. Add flour, 1/3 cup of the chopped almonds, and 1/4 cup of the remaining chocolate chips and combine well.
- Spread the mixture into the baking pan and bake for 32 to 35 minutes.
- Now it’s time for the toppings. Take the brownies out of the oven and put marshmallows, chopped chocolate chips, and the remaining 1/3 cup almonds on top. Continue baking until the marshmallows turn slightly brown. Then, turn the oven to broil and wait until the marshmallows are deeply browned. Take the brownies out and let them cool for about two hours.
- Put your rocky road brownies on a cutting board, cut them into squares, and serve.
