How to Make It
Ingredients for the chicken:
- 1.3 lb boneless skinless chicken thighs
- 3/4 tsp paprika
- 1/2 tsp each of salt and garlic powder
- 1/4-1/2 tsp black pepper
- 1/4 tsp onion powder and dried thyme
- 1 tbsp unsalted butter, olive oil
Ingredients for the orzo:
- 9 oz mushrooms
- 6 cloves of garlic
- 30 g unsalted butter
- 2 cups uncooked Orzo
- 4 3/4 cups of quality chicken stock
- A bunch of fresh parsley
- 1.8 oz parmesan
- Salt & black pepper
Instructions:
1. For this dish, it is recommended that you use chicken fillet thighs because the fat will be used to cook the mushrooms.
2. First, tenderize the meat. This can be done using a mallet. Then, flavor it with any spices that you want.
3. Place the chicken in a skillet with oil and butter, and cook until the meat is done. Then, put it to one side. Retain the oil and juices as this will be needed for the next part.
4. Put the mushrooms in the pan and start to fry. This will take a matter of minutes. Once all the oil and butter juices have been absorbed, add some more butter and garlic until they have a nice crisp crust on them.
5. Add the ingredients for the orzo to the skillet with the mushrooms and the chicken and leave it to simmer. Once everything has turned a lovely golden brown color and the orzo is cooked all the way through, it is ready to serve.
6. To serve, create a chive butter by melting some butter in the microwave and adding chives and a bit of salt. Sprinkle a bit of lemon juice over your dish and it’s ready to serve.
